Kevin’s love of cooking began at his mother’s elbow, tasting every pot on the stove and learning that the best meals weren’t expensive—they were shared. Years later, a gift from his uncle, a book about ghost towns, sparked a new passion: exploring New Mexico’s ghost towns. Armed with a 65‑cent map, a tent, and an aging ’69 Mustang, he spent his weekends chasing history across dirt tracks that barely qualified as roads.

What he found in those remote towns wasn’t just crumbling stone and weathered wood—it was people. Generous, curious, welcoming people who offered directions, stories, and always a warm meal. Green chile stew, hot tortillas, casseroles, cornbread, apple pie… and often a care package for the road. Many shared their treasured family recipes—most unwritten, passed down by memory and tradition—which Kevin scribbled onto scraps of paper before they were lost to time.

Decades later, those long‑forgotten recipes resurfaced, carrying with them the spirit of the ghost towns and the voices of the cooks who kept their heritage alive. Updated for modern kitchens but still rooted in frontier practicality, these hearty dishes reflect the miners, ranchers, farmers, and families who once built their lives in the rugged West.

After the launch of “The History of the St. James Hotel, Cimarron, New Mexico” the outcry for follow-up book on the paranormal side of the old frontier hotel was overwhelming! Is the St. James Hotel in Cimarron, New Mexico haunted? Many think so. This 150-year-old hotel and saloon saw the frontier blossom. Numerous Wild West characters stayed, drank, and gambled in this old guesthouse. Twenty-six men are said to have died in the St. James, more in the streets of Cimarron. The History of the St. James Hotel Cimarron, New Mexico is a detailed historical account of this Old West Hotel on the Santa Fe Trail. 26 killings are said to have occurred in the saloon and 17 can be verified in the book. Clay Allison, Bat Masterson, John Chisum, Mace Bowman, Jesse James, Wyatt Earp, all stayed at the St. James Hotel along with many other western notables. 

A detailed history of the founding family and the original proprietor, Henry Lambert, and his incredible life is  also documented. Along with the history of Lambert's Saloon & Inn and its transformation into the historical St. James Hotel.
